There is nothing wrong with our health message that we have in the books of Ellen White. The problem is in our interpretations.
We need to rectify our mistakes of promoting oils that kill or injure us. I've wondered, why are our dedicated people who follow the health message having the same problems that are killing the world? I think I've found one of the factors. I do believe that God gives us wisdom.
It's in part the wrong oils that we ingest. Now I am only the messenger. We are to be the head and not the tail, we are told. We can't have a lot of confidence in the current medical profession using their imperfect methods which mostly treats systems. Yes, they do a good job at the mechanics as to surgery and such. I've been to Eden Valley as a student and have been trained to be a medical missionary. I work construction to bring home the money. I suppose I shouldn't have said the doctor didn't know what he was talking about but you objected so vehemently it caught me off guard.
I could have said that he lumped all saturated fats together and he was going by the best information he was aware of not understanding the tests on coconut oil were based on hydrogenated oil. We do want to avoid them.
Dr Jeniffer Lopez writes, "With so much talk in the media about fats, and all the different types that exist, is it any wonder people are confused about which fats are good and which fats are bad? Most would say if it is fat, it's bad. This is not so. Actually, there are good fats, as well as bad fats.
 
 
Research at the University of Florida-Gainesville, determined that as much as 4.6% of all the fatty acids in unrefined canola are "trans" isomers (which are somewhat like plastic) due to the refining process. Yes, plastic, so you are ingesting isomers that are similar to plastic and plastic is toxic. And then if canola is hydrogenated, you have a double effect of toxins going into your body, trans-isomers, (possible plastics depending on how high the oil was boiled at if the canola was hydrogenated), and trans-fatty acids that cause coronary heart disease. Contrary to popular opinion, saturated fats, especially those found in unrefined coconut oil are not however harmful to health, but are important nutrition. There are no trans isomers in unrefined coconut butter, for example. ( This refers to many published research papers by Mary Enig, Ph.D. that refutes all the establishment propaganda condemning saturated fats. Mary Enig cannot be bought or suppressed by the hydrogenated oils and margarine industries.)
 
 
You are right to reason from cause to effect. Inspiration tells us to do so. Although I don't go for this genetic predisposed idea.
 The intelligent Christian physician has a constantly increasing realization of the connection between sin and disease. He strives to see more and more clearly the relation between cause and effect. He sees that those who are taking the nurses' course should be given a thorough education in the principles of health reform; that they should be taught to be strictly temperate in all things, because carelessness in regard to the laws of health is inexcusable in those set apart to teach others how to live. {CH 353.3}
Why did you have a heart attack after your careful program you've been on? Well it was only that you didn't know because of this little misunderstanding that many have about coconut oil. Yes it is a saturated fat but it is different from most saturated fats.  They did find coconut oil harmful but the studies were skewed for they used hydrogenated coconut oil for the tests and not virgin coconut oil.  The Doctor really should have said avoid oils all together to be safe. We should not depend on the world for answers. We should try our best to follow the counsel we have in our books.
We've been given a lot of misinformation as you will see by the sites I've given here from the other oil industry in order for them to sell their products. After three years your arteries should be clear if you stayed away from the other oils and used coconut or palm oil exclusively. But not the hydrogenated ones. 
 
 The current FDA Consumer's Guide to Fats was last updated in 1999 and consistently warns against (all) saturated fats, while failing to mention any harmful effects of trans fatty acids. Are we supposed to wait until we are told it's ok by the FDA before we change our habits. There is enough information for a reasonable man to give up the bad oils now. As I said I am the messenger and do you think I'd tell you to take something that would harm you? I only want to help and I stick my neck out to do so. Sometimes I feel like Elijiah.

Dr.  Leonard Lopez writes, "The really bad saturated fat is called a trans fatty acid. These are chemically altered (processed) fats. You can find them in most packaged foods listed on the label as partially hydrogenated or hydrogenated oil. Our bodies have a more difficult time with processed foods and would prefer foods in their natural state." 
 
When properly prepared, olives, like nuts, supply the place of butter and flesh meats. The oil, as eaten in the olive, is far preferable to animal oil or fat. It serves as a laxative. Its use will be found beneficial to consumptives, and it is healing to an inflamed, irritated stomach. M.H. 298
 
Olive oil is good for you as eaten in the olive. Why do you think she said that? Olive oil in its most natural state and not fried at high temperatures. Olives are fruit as well as coconuts are fruit and not a nut despite the name.
 
Why it's best not to cook with extra virgin olive oil

In other words, a study based on hydrogenated coconut oil has no relevance to the non-hydrogenated coconut milk or coconut oil that you eat.
 
Large scale human studies have provided overwhelming evidence that whenever drugs, including the unsaturated oils, were used to lower serum cholesterol, mortality increased, from a variety of causes including accidents, but mainly from cancer.
Since the l930s, it has been clearly established that suppression of the thyroid raises serum cholesterol (while increasing mortality from infections, cancer, and heart disease), while restoring the thyroid hormone brings cholesterol down to normal.
 
In the l940s, farmers attempted to use cheap coconut oil for fattening their animals, but they found that it made them lean, active and hungry. For a few years, an anti-thyroid drug was found to make the livestock get fat while eating less food, but then it was found to be a strong carcinogen, and it also probably produced hypothyroidism in the people who ate the meat.
By the late l940s, it was found that the same anti-thyroid effect, causing animals to get fat without eating much food, could be achieved by using soy beans and corn as feed.
Later, an animal experiment fed diets that were low or high in total fat, and in different groups the fat was provided by pure coconut oil, or a pure unsaturated oil, or by various mixtures of the two oils. At the end of their lives, the animals' obesity increased directly in proportion to the ratio of unsaturated oil to coconut oil in their diet, and was not related to the total amount of fat they had consumed.

However, in 1980, experimenters demonstrated that young rats fed milk containing soy oil incorporated the oil directly into their brain cells, and had structurally abnormal brain cells as a result.
The ability of some of the medium chain saturated fatty acids in coconut oil to inhibit the liver's formation of fat very likely synergizes with the pro-thyroid effect, in allowing energy to be used, rather than stored.
 
When fat isn't formed from carbohydrate, the sugar is available for use, or for storage as glycogen. Therefore, shifting from unsaturated fats in foods to coconut oil involves several anti-stress processes, reducing our need for the adrenal hormones. Decreased blood sugar is a basic signal for the release of adrenal hormones.
 
Recent reports from the U.S. Food and Drug Administration about required labeling of the trans fatty acids will put coconut oil in a more competitive position and may help return to its use by the baking and snack food industry where it has continued to be recognized for its functionality. Now it can be recognized for another kind of functionality: the improvement of the health of mankind.”

In an article published in the Indian Coconut Journal, Sept., 1995, Dr. Enig stated that "Ancel Keys is largely responsible for starting the anti-saturated fat agenda in the United States." She quoted Keys as saying that "All fats raise serum cholesterol; saturated fats raise and polyunsaturated fats lower serum cholesterol; Hydrogenated fats are the problem; Animal fats are the problem." Enig also stated: "The problems for coconut oil started four decades ago when researchers fed animals hydrogenated coconut oil that was purposely altered to make it completely devoid of any essential fatty acids... The animals fed the hydrogenated coconut oil (as the only fat source) naturally became essential fatty acid deficient; their serum cholesterol increased. Diets that cause an essential fatty acid deficiency always produce an increase in serum cholesterol levels as well as in increase in the atherosclerotic indices. The same effect has also been seen when other ...highly hydrogenated oils such as cottonseed, soybean or corn oils have been fed; so it is clearly a function of the hydrogenated products, either because the oil is essential fatty acid (EFA) deficient or because of transfatty acids."
 
What about studies where animals were fed unprocessed coconut oil? Enig wrote: "Hostmark et al (1980) compared the effects of diets containing 10% coconut oil and 10% sunflower oil on lipoprotein distribution in male Wistar rats. Coconut oil feeding produced significantly lower levels (p=0.05) of pre-beta lipoproteins (VLDL) and significantly higher (p=<0.01) alpha-lipoproteins (HDL) relative to sunflower feeding." (Editor's note: HDLs are considered the good cholesterol as they prevent deposits of LDL cholesterol on artery walls.) She also cited a study by Awad (1981) on Wistar rats fed a diet of either 14% (natural) coconut oil or 14% safflower oil. She stated:"Total tissue cholesterol accumulation for animals on the safflower diet was six times greater than for animals fed the [unhydrogenated] coconut oil. A conclusion that can be drawn from some of the animal research is that feeding hydrogenated coconut oil devoid of essential fatty acids (EFA) ...potentate the formation of atherosclerosis markers. It is of note that animals fed regular coconut oil have less cholesterol deposited in their livers and other parts of their bodies." Enig also referred to epidemiological studies done by Kaunitz and Dayrit (1992) on coconut eating societies who found that "available population studies show that dietary coconut oil does not lead to high serum cholesterol nor to high coronary heart disease.." It is noteworthy that hydrogenated coconut oil was not consumed by these coconut eating societies; they only consumed natural coconut oil.
 
Kaunitz and Dayrit noted in 1989 that Mendis et al reported when Sri Lankan males were changed from their normal diet of natural coconut oil to corn oil, their LDL cholesterol declined 23.8% which is good news, but their HDL cholesterol declined 41.4% which is bad news. This created a more unfavorable LDL/HDL ratio meaning that on the corn oil diet there would be more cholesterol depositing on the artery walls than on the coconut oil diet. In plain English, a diet using liquid corn oil will lead to cholesterol deposits faster than a diet using natural coconut oil. Natural coconut oil, by increasing the good HDL cholesterol, may help prevent atherosclerosis and heart disease. Enig cited several other studies in her article that showed that natural coconut oil (not hydrogenated coconut oil) had health benefits markers indicating that coconut oil was more beneficial in preventing heart disease than most vegetable oils. Enig also cited the research of Tholstrup et al (1994) on natural (NOT hydrogenated) palm kernel oil which is high in lauric acid and also contains myristic acid. Tholstrup found that with palm kernel oil, "HDL cholesterol levels increased significantly from baseline values."
 
Enig reported in her article that the effects of coconut oil on persons with low cholesterol levels was the opposite of persons with high cholesterol levels. Of persons with low total cholesterol counts, she wrote that "there may be a rising of serum cholesterol, LDL cholesterol and especially HDL cholesterol." In persons with high cholesterol levels, "there is lowering of total cholesterol and LDL cholesterol." The studies she cited showed that in both groups the LDL/HDL ratio moved in a favorable direction. In persons with AIDS or immune-compromised from other causes, the conclusions of this research are profound. It means everything the public has been told about vegetable oils on television for the past 15 years has been half truths and leading the public to the wrong conclusions. The public has been led to believe that tropicals will clog your arteries and cause heart disease. In fact, the opposite is true; natural tropical oils will help prevent hardening of the arteries while most liquid vegetable oils will increase hardening of the arteries! In a phone call to Mary Enig in April, 1997, she told me that the worst oil to use for any purpose is Canola oil. When used in cooking, it produces the very high levels of transfatty acids.

Why are We Misinformed?
In one word: economics. Beginning with a flawed study four decades ago, continuing through the 1950s, intensifying in the 1980s, and again in the 1990s, the misinformation about coconut oil has been promulgated by such economically motivated organizations as the American Soybean Association (ASA), the Corn Products Company (CPC International) and the Center for Science in the Public Interest (CSPI). They are aided by the United States Food and Drug Administration (FDA), many of whose key personnel are recruited from and return to the vegetable oil industry. Previously, coconut oil was widely used in baked goods and fried goods until their publicity campaigns, based on erroneous information, totally discredited coconut oil and caused its nearly complete elimination from the American diet.
Finally, after years of denial, The FDA and CSPI are finally talking about the harmful effects of trans fatty acids, evidence of which has been accumulating since the 1950s. Nonetheless, they continue to disparage coconut oil and take no effective action to limit TFAs, which already have been banned in some European countries. TFAs will finally be listed on food labels, starting in 2006 — why has it taken them so long! TFA dangers have been known for decades and continue to cause disease! News items coming from the USDA and FDA still lump TFAs with saturated fats, which are natural and do contain nutrients vital for our bodies. The current FDA Consumer's Guide to Fats was last updated in 1999 and consistently warns against (all) saturated fats, while failing to mention any harmful effects of trans fatty acids.
How effective is this brainwashing? Many of you will not believe the facts on these pages and will continue to avoid coconut oil and coconut milk out of health concerns. Despite the proven benefits. We invite you to investigate further.

Although the AHA had committed itself to the lipid hypothesis and the unproven theory that polyunsaturated oils afforded protection against heart disease, concerns about hydrogenated vegetable oils were sufficiently great to warrant the inclusion of the following statement in the organization's 1968 diet heart statement: "Partial hydrogenation of polyunsaturated fats results in the formation of trans forms which are less effective than cis, cis forms in lowering cholesterol concentrations. It should be noted that many currently available shortening and margarines are partially hydrogenated and may contain little polyunsaturated fat of the natural cis, cis form." 150,000 copies of the statement were printed but never distributed. The shortening industry objected strongly and a researcher named Fred Mattson of Procter and Gamble convinced Campbell Moses, medical director of the AHA, to remove it.13 The final recommendations for the public contained three major points—restrict calories, substitute polyunsaturates for saturates and reduce cholesterol in the diet.
 
Most of the images and metaphors relating to coconut oil and cholesterol that circulate in our culture are false and misleading.
 
The traditional Pacific Islander diet included large quantities of coconut, and those who still follow this diet have a low incidence of heart disease or overweight. When a Western-style diet including vegetable oils replaces their traditional diet, all of the fat-related diseases common in the United States begin to appear. Besides its nutritional value, Coconut Oil makes a luscious and soothing massage and body oil for dry and or damaged skin.
 
  • There are those that claim unrefined coconut oil may also prove beneficial in preventing or at least controlling a number of different health issues. Unrefined coconut oil is only one of several products made using coconuts.
  • Coconut water has also been used as an intravenous fluid, especially in military conflicts, where medical supplies can sometimes be difficult to obtain, particularly in remote areas. Some companies market coconut juice as a health food, pointing to its nutritional content and low fat nature.
